Malgaiola (10 oz)
This lush, creamy soft-ripened cheese is made with a blend of cow and sheep’s milk for an excellent balance of flavors. Made in Lombardia, it is aged for 30 days by master affineurs, the Arnoldi family. When young, Malgaiola is light, vegetal, and buttery. As it ages, it becomes softer and develops a more intense, mushroomy flavor.
